超加工食品与肿瘤风险的研究进展

Advances in research on ultra-processed foods and cancer risk

  • 摘要: 超加工食品的高摄入量在流行病学研究中与肥胖密切相关,而肥胖是至少13 种肿瘤的已知风险因素。此外,超加工食品中的食品添加剂(如乳化剂)、包装材料迁移及营养失衡可能通过炎症、肠道菌群紊乱等途径直接促进肿瘤发生。近年队列研究表明,超加工食品摄入与总体肿瘤发病率及乳腺癌、结直肠癌等特定肿瘤风险呈正相关,但结果存在异质性,多数关联需进一步验证。本综述将回顾性评估超加工食品与肿瘤风险的流行病学关联,剖析其危险因素,并为基于风险的监管政策提供科学依据,以降低人群暴露风险。

     

    Abstract: High intake of ultra-processed foods (UPFs) is closely associated with obesity in epidemiological studies, and obesity is a known risk factor for at least 13 types of cancer. Moreover, food additives in UPFs (such as emulsifiers), migration of packaging materials, and nutritional imbalance may directly promote tumorigenesis through inflammatory and gut microbiota dysbiosis pathways. Recent cohort studies have shown that UPFs intake is positively correlated with overall cancer incidence and the risks of specific cancers such as breast and colorectal cancer; however, results are heterogeneous, and most associations require further verification. This reviewsummarizes the epidemiological evidence on the association between UPFs and cancer risk, analyzes potential mechanisms, and provides a scientific basis for risk-based regulatory policies to reduce population exposure.
